LARGE HANDFUL COOKED PRAWN COCKTAIL
1 PUNNET CHERRY TOMATOES, LEFT WHOLE
1 CHILLI, FINELY CHOPPED, SEEDS REMOVED
4 GARLIC CLOVES, MINCED
1/2 BUNCH BASIL, ROUGHLY CHOPPED
1/4 BUNCH PARSLEY, ROUGHLY CHOPPED
1/2 CUP SPINACH
4 LEMONS
SALT & PEPPER
OLIVE OIL
PARMESAN FOR TOPPING

GRATER, FOR PARMESAN

DEEP POT, FOR COOKING PASTA
COLANDER OR STRAINER
Method
PAN FRY WHOLE TOMATOES WITH SALT & PEPPER FOR A FEW MINUTES
ADD PRAWNS, GARLIC, HERBS, CHILLI AND JUICE OF 1 LEMON AND LET SIMMER FOR 3-4 MINUTES OR UNTIL TOMATOES SOFTEN
ADD SPINACH AND LET IT WILT FOR A MINUTE OR TWO
COOK PASTA ACCORDING TO PACKET INSTRUCTIONS AND STRAIN WHEN READY, RETURN TO POT
SEASON WITH A SPLASH OF OLIVE OIL, SPRINKLE OF SEA SALT, CRACKED PEPPER, PARMESAN AND JUICE OF 2-3 LEMONS TO TASTE
TRANSFER PRAWN MIX TO THE PASTA POT AND STIR THROUGH
SERVE WITH FRESH BASIL, A SPRINKLE OF PARMESAN AND CHILLI OIL IF YOU DESIRE!
