Ingredients


225G HALLOUMI (1 PACKET)

5 FIGS, SLICED 

5 BAMBOO SKEWERS, SOAKED IN WATER

3 TSP EXTRA VIRGIN OLIVE OIL 

3 TSP BALSAMIC VINEGAR

SALT & PEPPER 

MINT SPRIGS (TO FINISH)

DRIZZLE HONEY (TO FINISH)

SPRINKLE ZA’ATAR (TO FINISH)

1-2 LEMON WEDGES (TO FINISH)

Method


  1. SOAK YOUR SKEWERS IN WATER AND SET ASIDE FOR MINIMUM 20 MINS

  2. STRAIN YOUR HALLOUMI FROM THE PACKET, USING PAPER TOWEL TO DRAW OUT EXCESS LIQUID

  3. SLICE INTO 2CM CUBES

  4. REMOVE THE TOPS OF THE FIGS AND SLICE INTO EIGHTHS

  5. REMOVE SKEWERS FROM THREAD YOUR SKEWERS IN ALTERNATES UNTIL ALL FIG AND HALLOUMI HAS BEEN USED

  6. DRIZZLE WITH EVOO, BALSAMIC VINEGAR, ADDING A CRACK OF SALT AND PEPPER

  7. PREHEAT YOUR BARBEQUE OR A FRY PAN

  8. ADD AN ADDITIONAL GLUG OF EVOO SO THE SKEWERS DON’T STICK

  9. GRILL FOR A COUPLE OF MINUTES EACH SIDE UNTIL GOLDEN AND CARAMELISED

  10. PLACE ON A SERVING TRAY, TOPPING WITH MINT SPRIGS, A DRIZZLE OF HONEY, SQUEEZE OF LEMON AND AN OPTIONAL SPRINKLE OF ZA’ATAR TO FINISH — ENJOY!
