250G SOBA NOODLES, COOKED OVER STOVE

FOR THE DRESSING

3-4 GARLIC CLOVES, MINCED

3 TSP GINGER, MINCED

2 TSP SESAME OIL

2 TSP MIRIN

2 TSP SUGAR OF CHOICE

3 TSP RICE WINE VINEGAR

2 TSP TAMARI OR SOY SAUCE

SPLASH WATER (AS PER TASTE/VOLUME)

1 TSP SALT (OPTIONAL)

FOR THE PICKLED RADISH

1 BUNCH RADISH, SLICED ON MANDOLIN

1 TBSP SHAOXING WINE (CHINESE COOKING WINE)

3 TBSP RICE WINE VINEGAR

1 TBSP CASTER SUGAR

PINCH SALT

SPLASH WATER

TO SERVE

1/4 SLICED AVOCADO PER BOWL

ADDITIONAL TOASTED BLACK/WHITE SESAME SEEDS

FRIED SHALLOTS

Method


  1. PREPARE YOUR PICKLED RADISH, SETTING ASIDE FOR AT LEAST 20 MINS

  2. IN A JAR OR CONTAINER PREPARE YOUR SALAD DRESSING, SHAKING TO COMBINE

  3. TASTE AND ADD WATER, MORE RICE VINEGAR OR SUGAR (PER YOUR TASTE PREFERENCES), SET ASIDE

  4. COOK YOUR SOBA NOODLES OVER THE STOVE PER PACKET INSTRUCTIONS

  5. STRAIN, RINSE AND COAT WITH SOME SESAME OIL, MIXING THROUGH TO STOP THE NOODLES CLUMPING/STICKING TOGETHER. SET ASIDE

  6. PREPARE SALAD INGREDIENTS, TOSSING TOGETHER TO COMBINE

  7. POUR OVER 3/4 OF THE DRESSING AND TOSS AGAIN

  8. DIVIDE SALAD BETWEEN BOWLS/PLATES. ADD YOUR PICKLED RADISH, AVOCADO, REST OF DRESSING AND OTHER LISTED SERVING INGREDIENTS

  9. ENJOY ON ITS OWN OR IF SERVING WITH SALMON (ONE PER PERSON), PAN FRY IN OIL, SKIN SIDE DOWN FIRST
